How to Temper Chocolate for a Fondue Party
Chocolate fondue is one of the simplest desserts to throw together — melt chocolate, dip fruit, done. But if you've ever had chocolate fondue that turned dull and grainy as it cooled on a strawberry, or one that stayed glossy and snapped cleanly, the difference is tempering, and it's worth understanding even for something as casual as a dessert pot.
What tempering actually does
Chocolate is a suspension of cocoa solids and sugar in cocoa butter, and cocoa butter is unusual: it can solidify into several different crystal structures depending on how it's heated and cooled. Only one of those crystal forms gives chocolate its characteristic glossy shine and firm snap. The others set soft, dull, or develop a grey, chalky "bloom" on the surface.
Tempering is simply the process of guiding melted chocolate through a specific melt-cool-rework temperature curve that favors that one good crystal structure over the others. For a bar of chocolate sitting on a shelf, tempering matters purely for appearance and snap. For a fondue, it also affects how the chocolate behaves once it's on a dipped piece of fruit or marshmallow and starts to cool at the table.
The seed method
Professional chocolatiers often temper on a marble slab, but that's overkill for a fondue pot. The seed method is far more practical for a home kitchen: melt most of your chocolate to a peak temperature, then stir in a reserved portion of unmelted chocolate (the "seed"). The unmelted chocolate already contains the correctly-formed crystals, and stirring it into the melted batch cools the mixture while "seeding" those good crystals throughout, encouraging the rest of the chocolate to set the same way.
A common split is to melt about 80% of your total chocolate and reserve the remaining 20% as seed, added gradually while stirring until it's fully melted in and the mixture has cooled to its target working temperature.
The temperature curve
Each type of chocolate has its own melt, cool, and working temperatures, because milk solids (and the complete absence of cocoa solids in white chocolate) make it more heat-sensitive:
- Dark chocolate: melt to around 45°C (113°F), cool to about 27°C (81°F) while seeding, then rework to a working temperature near 31–32°C (88–90°F).
- Milk chocolate: melt to around 40°C (104°F), cool to about 26°C (79°F), then rework to roughly 29–30°C (84–86°F).
- White chocolate: melt to around 40°C (104°F), cool to about 26°C (79°F), then rework to a slightly lower working point near 28–29°C (82–84°F).
Dark chocolate can tolerate the highest peak temperature because it's mostly cocoa solids and cocoa butter with no milk fat to scorch. Milk and white chocolate are worked a few degrees cooler across the board to avoid seizing or burning the more delicate milk solids.
Keeping it in temper over a burner
A fondue burner isn't a precision instrument, so the real challenge isn't hitting the working temperature once — it's holding it for the length of the meal without the chocolate creeping back up in temperature and falling out of temper. A low flame, checked periodically with a kitchen thermometer, is far more reliable than eyeballing it. If the chocolate does overheat and fall out of temper, stirring in a small amount of fresh unmelted chocolate can sometimes bring it back.
When seizing happens
Chocolate "seizes" — turns suddenly thick, grainy, and unworkable — almost always because a small amount of water got into it, or because it was overheated too quickly. Dry bowls, dry utensils, and gentle, gradual heat are the real prevention. A splash of warm cream or neutral oil whisked in can sometimes smooth a mildly seized batch back out, but it's much easier to avoid seizing in the first place than to fix it at the table.
None of this is essential to enjoy a chocolate fondue — untempered chocolate still tastes exactly the same. But if you want the pot to stay glossy and the dipped fruit to set with a clean snap rather than a soft, streaky coating, the seed method and a thermometer are worth the extra few minutes.
