Chocolate is a suspension of cocoa solids and sugar in cocoa butter, and cocoa butter can set into several different crystal structures. Only one of them gives chocolate its glossy snap and resistance to melting in your hand — the rest set dull, soft, or streaky with grey “bloom.” Tempering is simply guiding the chocolate through a melt-cool-rework curve that favours the good crystal.
For a fondue pot, the goal is a working temperature you can hold over a low flame for the length of the meal without scorching the chocolate or letting it fall out of temper. Use a reliable kitchen thermometer rather than guessing by eye.

Do you really need to temper chocolate for a fondue?
Not strictly — untempered chocolate still melts and tastes fine warm. But tempering keeps the chocolate glossy and smooth rather than dull or streaky, and if any sets on a dipped strawberry or marshmallow before it's eaten, tempered chocolate snaps cleanly instead of turning soft and greasy.
What is the seed method?
The seed method tempers chocolate by melting most of it to a peak temperature, then stirring in a reserved portion of unmelted chocolate (the 'seed') to cool the whole batch and encourage stable cocoa-butter crystals to form. It's simpler than tabling chocolate on a marble slab and works well for a fondue pot.
Why do dark, milk, and white chocolate need different temperatures?
Milk and white chocolate contain milk solids and, in white chocolate's case, no cocoa solids at all — both make the chocolate more heat-sensitive and prone to scorching or seizing. They're melted and worked a few degrees cooler than dark chocolate, which is purer cocoa solids and cocoa butter.
What if my chocolate fondue seizes or goes grainy?
Seizing usually means a drop of water got into the chocolate, or it was overheated. A small splash of warm cream or oil whisked in can sometimes smooth it back out, but prevention — dry equipment, gentle heat, and a thermometer — is far more reliable than a fix.
